I tried this recipe last night for dessert. It was easy and tasted amazing. I found this recipe on Pinterest. It was originally pinned by http://www.kojo-designs.com.
1 can of coconut milk (not lite)*
5 tablespoons of cocoa powder
2 tablespoons of powdered sugar
Open the can of coconut milk, pour into a bowl and let sit out in the fridge overnight (it helps the coconut milk thicken up).
Add the cocoa and the powdered sugar to the coconut milk.
Pour the mixture into a metal bow. With a mixer, whip the mixture until fluffy. It takes a couple of minutes- maybe even longer- just keep whipping on the highest speed until it starts fluffing up. It will turn from a dark brown to a milk chocolate brown when it’s aerated enough to pipe out.
Add the mousse to a frosting bag with a big tip. Pipe into sprinkle rimmed shot glass or just pour into ramekins and garnish with chocolate shavings (like I did).
**I used Stevia as a sweetener and it still tasted amazing. One criticism my daughters had was that it tasted like dark chocolate and they are more of a milk chocolate kind of gals. Also, this recipe is better freshly made. When refrigerated it settles and needs to be remixed especially if you are using Stevia as a sweetener and you may find that you need to add Stevia the next day.
Warning** It is decadent! I couldn’t finish one serving in one sitting and I’m a chocoholic.
